“Mpacchiuse” potatoes

I n g r e d i e n t s

  • 300 g potatoes
  • oil and salt

I n s t r u c t i o n s

  • Peel potatoes, cut into 1-mm-thick slices and wash well in cold water.
  • Drain and pat dry. In an iron skillet put extra virgin oil to cover the base of the pan (not too much), and when hot put all the potatoes and let them cook without stirring until they make an outer crust.
  • Turn all at once and let them make a crust on the other side. Serve in a warm tray on the table.
